This is a master class into the production of chicken ham. This one-day session is designed to provide you with formal training in:
- The science and art of curing and smoking
- Selection and preparation of chicken cuts
- Brining, curing agents and seasonings
- Smoking and steaming techniques
- Hygiene, HACCP and food safety
- Costing, packaging and local regulations
- Equipment options and sourcing
Target Audience
Agro-entrepreneurs, caterers, small scale farmers and artisan food producers.
The duration of this course is 6 contact hours.

Online Registration
To register for the online course, please follow the instructions below:

3. Payment of TT$800.00 (650 +150) can be made via a direct or in bank deposit as directed here.
Once you have deposited the required payment, please email and attach a copy of the stamped deposit slip to Centre for & Undergraduate Business Programmes (CUBP) [email protected] informing of such.
Once CUBP verifies the deposit, final registration details will be forwarded to the student.
